Definitely would be helpful to know if those engines were there before updating
Basically, there are some baked in search engines and those get compiled/cached in the person’s profile. When those default engines receive an update, the cached version gets updated too. If those default ones are modified, sometimes this can cause an issue.
The default engine (whatever it is) will always show in the list. But the others should obviously be showing too. I think if you try to add another engine manually (ex: as @Evan123 suggested) it might help rebuild that cache. It’s worth a shot.
If you have multiple profiles, you should be able to verify the other profile has the items shown. I’m not sure what exactly caused this problem. The profile stores this inside the Preferences file in your profile directory (ex: %LOCALAPPDATA%\BraveSoftware\Brave-Browser\User Data\Default\Preferences on Windows).
