More specifically, is it possible to remove brave rewards+shield and all the other proprietary bits from brave browser? I want to do this because I can’t find another open source chromium based browser that has automatic updates and sync. I want to make the browser as lightweight as possible as well.

I don’t know if that’s possible but I think you can disable most of the features
